Fancy At Home Date Night!


c2I’m not the kind of person to receive requests for hair or makeup tips. I am however the kind of person who gets asked to share recipes though! Every second Friday is fancy homemade dinner night in the MacNeil Household. This past weekend I made a seafood casserole. If you’re lucky enough to live in Nova Scotia, this is a pretty cheap dish to make. Chowder packs can be purchased from Sobey’s for under five bucks this time of year. I like to add extra shrimp and scallops but you can omit the extras and just add another sleeve of chowder mix if you wanted to keep it a little more budget friendly. Here’s the step by step guide to making the dish.

Step one, get this adorable baby to take a nap!

1 pound chowder pack ( mine was a mix of haddock, salmon & lobster)

1 pound cooked shrimp with the tails removed

1 pound fresh scallops

2 tbs butter

2 cloves of garlic minced

1 tsp red chili flakes

Juice of one lemon

1/2 cup white wine

3/4 cup whipping cream

2 tbs flour

1/2 cup fresh grated parmesan cheese

5 large potatoes whipped.

Peel and boil potatoes. Once potatoes are cooked, use an electric mixer to whip potatoes, set aside to cool.

In a large frying pan, melt butter sauté garlic and chili flakes. When garlic begins to soften add all the seafood and coat with the mixture. Add in lemon and white wine.

Once the seafood has fully cooked add in the whipping cream and whisk in flour. Cook over high heat for five minutes. Once the mixture has thickened, add the cheese continue to boil over heat, scraping bottom of pan and sides with a wooden spoon to avoid scorching.

Pour the mixture in a large casserole pan.

cFill a large ziplock bag with the cooled potatoes and cut a hole in the bottom.

Pipe the potatoes onto the seafood mixture and place in the oven for 45 minutes at 350.

The tops of the potatoes will crisp up and turn golden.

I like to serve this with a side Caesar Salad.

Since November 2013 I’ve been gluten and sometimes ( I cheated like crazy over the Holidays) dairy free. I have to admit, I’ve noticed huge changes. I’m down fifteen pounds, my skin looks better and I feel pretty good in general. Yesterday I posted a pic of my dinner to Instagram (because I’m that person.) Here is the recipe for my  homemade gluten and dairy free Mamastu Spicy Sesame Chicken.

2-3 Chicken Breast

1 cup julienne cut raw carrots

1 cup julienne cut  raw turnip

2-3 green onions thinly sliced

2 cloves minced garlic

1 small piece of ginger minced ( or 2 frozen cubes or 1 tsp of dry ginger)

1 tbs sesame oil

1 tsp sugar

1-2 tbs Sriracha garlic chili sauce ( this is different from the big squeeze bottle of Sriracha, it comes in a bottle with a green twist off top. You can find a photo here )

Once the chicken has been cooked, roughly chop and set aside. Mix all of the ingredients listed above together and add the chicken. Place it in the fridge until  you’re ready to plate , the dish is served cold with warm rice.

The amount of Sriracha used will depend on how spicy you like you food. One tablespoon will make it really spicy ,two will be insanely spicy yet amazingly delicious!

I dry heaved at the Waterfront Tim Horton’s this morning. Maybe it’s because I’m hung over from drinking too much at my own dinner party last night, but I’m pretty sure it was because of the stench coming from the man behind me.

If you are over the age of 14 and are not working out, at no point is it acceptable to stink. Also get a fucking clue. When someone in front of you keeps moving away and standing off to the side, don’t move closer to them.  I can’t understand why our government spent money on an ad campaign trying to convince people not to jump in front of moving trains but putting out a PSA on general hygiene is out of the fucking question?

This man smelled like what I imagine Kieffer’s  Hoodie would smell like.
